Baked oats

So after Hannah (@healinghannah) gave me the recipe for these baked oats, they have been my absolute favourite breakfast EVER :-) they are so so yummy, so warming and so delicious, I seriously urge you all to go and try it asap :) they do take 25 minutes in the oven, so maybe they are better for a weekend unless you want to get up even earlier on a school day (they are however, sO worth it hehe)



Okay so here's the recipe :-)

Ingredients - (you can change the measurements)

50g oats, 150ml almond milk, 1/2 teaspoon baking powder, 100g berries (raspberries and blueberries) 50g strawberries and a banana

  

Method - pre heat the oven to 200 degrees and get out an ovenproof bowl. Weigh out the oats and milk and then stir them together with 1/2 teaspoon baking powder. Warm up half a banana in the microwave to get it extra ripe and sweet, then add to the mixture and stir. Finally add the berries and give it a quick mix with the spoon, just so that the berries are evenly spread. Pour in the ovenproof bowl, and top with the rest of the banana. Then into the oven for 25-30 minutes on 200 degrees. The top should be a very light brown, and then gooey in the middle :) it's normally really hot, so you can let it cool down a little bit before eating, but you don't have to. If you're in a rush, you can put the oven higher and it bakes quicker. Enjoy :)

Porridge

Porridge is my favourite breakfast - I literally have it every morning without fail :) it's so comforting and delicious! You can also top it with pretty much anything, so it never gets boring. Seeing as my blog is called porridgexprincess, I'm definitely going to do quite a lot of blog posts on my favourite porridge recipes! I have a lot, so here are just a few :-) don't worry, a lot more will come, and if you have any requests please just ask ;)

MANGO, BANANA AND PASSIONFRUIT OATS 

Ingredients - (you can change the measurements to whatever suits you!)

60g mango, a banana, a passionfruit, 50g oats and 250ml almond milk~water (can be any milk)

Method- put the oats and milk in a pan on the stove, on a high heat. Let the mixture absorb for a minute or two, then cut the passionfruit open and scoop the pulp into the pan. Keep stirring for a while, until the oats start to thicken. Once it starts to boil, turn the heat down. Then add the mango (leave a tiny bit to top) and half the banana in chunks. Keep stirring and stirring until the oats have reached the thickness you want them to be, then pour in a bowl and top with the rest of the mango and the other half of the banana :) 

The mango, passionfruit and banana go really well together, and it's so yummy and creamy! One of my favs!

RASPBERRY, STRAWBERRY AND BANANA PORRIDGE

Ingredients - (once again you can change all the measurements) 

50g  raspberries, 80g strawberries, a banana, 50g oats and 250ml almond milk~water (or any milk)

Method- it's the same method as the mango, passionfruit and banana oats really! Just put the oats and milk in a pan on the stove, then after a minute add the raspberries and stir until the mixture goes pinkish. Then when it's almost done, add half of the banana and half of the strawberries in chunks and  stir until ready! Pour in a bowl and top with the other half of the strawbs and banana :) yum!

  




CARROT CAKE OATS

Ingredients - (you can change the measurements)

50g raspberries, heaped teaspoon of cinnamon, 1/4tsp nutmeg and 1/4tsp ginger, 250ml almond milk~water, a banana, 50g oats, a carrot

Method - cook the oats and milk on the stove on a high heat, then after a minute add the raspberries and let them disintegrate. Once the oats start boiling, turn the heat down a bit. After a while, add the GRATED carrot (I forgot to grate it once and peeled it, and it wasn't very nice! So remember to grate it) you don't have to add all the carrot, it depends how much you want. Keep stirring and then add the cinnamon, nutmeg and ginger. When it looks about done, add the banana chopped up in chunks (leave a bit for topping) and stir. Pour in a bowl to serve and top with the remainder of the banana. :)





CINNAMON, BANANA AND MELTED RASPBERRY OATS with mango (optional)

Ingredients - (you can change the measurements)

50g oats, heaped teaspoon cinnamon, a banana, 250ml almond milk~water, 50 g raspberries, (50g mango)

Method - cook the oats and milk in a pan on the stove, and when it looks about done, add the cinnamon and half the banana chopped up in chunks. (You can also had most of the mango now if you have mango) whilst it's still slowly cooking, put the raspberries in a bowl in the microwave and let them melt for about 25 seconds. When the oats are done, pour them in a bowl and top with the rest of the banana (the rest of the mango) and the melted raspberries! So nice :)




RASPBERRY PORRIDGE TOPPED WITH A BANANA AND A HEATED UP STRAWBERRY CRUNCH NAKD BAR

Ingredients - (you can change the measurements)

50 g raspberries, a small banana, 50g oats, 150ml almond milk, a strawberry crunch (can be any flavour) nakd bar, 100ml water (or more milk)

Method - cook the oats, milk, water and raspberries in a pan on the stove as usual. When they are almost done, add half the banana in chunks and keep stirring. Whilst this is cooking, heat the nakd bar in the microwave for about 10 seconds. Then pour the oats in a bowl, top with the other half of the banana and the nakd bar cut in chunks :) delicious!!

About me

Hey guys!
So thanks to Toni, (@healingtoni) I've decided to start a blog. This first post is just going to be a bit about me so you can all get to know me a bit better (not that you're probably in the slightest bit interested hehe) but oh well!
So, my name is Rosanna Clarke, and I'm 13 years old. I have a twin sister, a brother and two older sisters. I'm half Dutch, half English. My mum and dad divorced three years ago, and currently I'm living in a house that belongs to an old man (95 years old!!) who's a good friend of my mum. I love all sport, but thanks to my ED I've not been allowed to play it for over a year and a half :( I also love animals, languages, english, maths, art, photography, piano (which I play with my dad) cooking/baking, babies and dog walks ;) I'm a vegetarian, but for other reasons - not really my ED.
When I grow up, I want to be a vet, go to Africa or set up my own clinic for girls with eating disorders! As well as having six kids of course :-) I'd also quite like to set up my own little cafe/bakery, but if I set up an orphanage in Africa I don't think I'll have time for that oops!
Before Mother's Day last week (Sunday 15th March) I'd never broken a bone before, even with all the sport I used to play! But then I fell down the stairs and broke my collarbone :/ hehe #clumsy, shame I didn't break my arm though because I wanted a cool cast where everyone writes their names on ;-)
Last year (from November to April) I was off school because of anorexia, then I went back to school but now I'm back off again :( hopefully for not tooo long though!
I have a dog, a guineapig and a rabbit, I used to have four cats but we had to give them away to a good friend when we moved :( and I used to have 23 guineapigs but they got eaten by a fox :(( most of my (mums side) family live in Holland. I have 49 cousins, most of them babies and toddlers ;) my dads side live in Cornwall and Oxford.



Well, not really sure what else to say! I'm going to use this blog to write my recipes, hobbies, things that interest me and anything you guys want! Hope you enjoy reading them, and I apologise in advance for not being a very good writer :/
